Cheesy Eggplant bake

    We grew two eggplant this season and I have never really known a good way to use them. So I was really chuffed to find a good recipe and we tried it out tonight. Delish!

    I used two medium eggplant. Cut them lengthways into slices about 5mm thick. With a ridged frying pan I cooked them on high heat with olive oil on both sides till well coloured and tender. In a medium size baking dish pour some basic pasta sauce over the bottom. Lay a few eggplant slices over the sauce. Top with dollops of a mix made of the following:

    250g ricotta cheese
    shredded basil leaves
    slivered almonds (I actually just chopped a few almonds up)
    fresh breadcrumbs
    one egg yolk
    grated parmesan cheese
    salt/pepper

    Then put another layer of the eggplant slices. Then pour the rest of the pasta sauce over and top with grated cheddar cheese. Bake at 180 C until yummy browned and bubbly. Enjoy!

    Nice, in this recipe which use is egg, but I hate eggs made dishes if you have any more option to bake it without egg so please share here...
