we had a heap of potatoes that i dug up i needed the space of other crops been a month and some had started to sprout so what to do make gnocchi freeze them down for later use.
Oh I should mention I'm a retired chef i have a lot toys revolving around cooking eg sausage stuffer, smoker cheese making gear I get board easily so i have lots of hobbies. Anyway getting off track.

800gm starchy potatoes
300gm flour
1 egg
70gm Parmesan cheese

we also used 2 tbls of powdered spinach (Home grown and dehydrated)

Steam the potatoes push them through a mouli or a ricer season with salt and pepper add the lightly beaten egg gently mix in add the parmesan and half the flour gently mix that in add the rest of the flour try not to over mix or kneed the mix it will make them a little tough.
take small amount roll to form a sausage cut into 1 cm pieces you can use a gnocchi board or the back of a fork to roll them you dont need to do this and just have small pillows in stead the groves and indent just help to hold the sauce.
cook in salted boiling water for 3 minutes they will float when ready

Robbie that's a great way to store excess potatoes!

I too am a (more or less) retired chef, except that even looking at food makes me fat!
I still do cook and on occasion for friends.
I experiment with foods I grow trying to create high n volume low calorie or keto style meals.
Due to our perchant for increasing the nutrition of everything we grow, its very hard because there is enough nutrition in an orange sized volume of food to keep a person going for 24 hrs. Everything eaten after that is excess to requirements therefore stored as fat.
