First go at fermenting Olives

Well not really fermenting. But brining. if that is even a word.
After watching nearly all of Mark's videos over the last few weeks I have been so inspired to do some different things. I built some major sized raised vege gardens, bought some very different seeds to try something different and am so keen to ferment some pickles next season, so have purchased a heap of different types of cucumbers ready to grow.
But, in the mean time, I read an article on pickling/ preserving olives and thought, well I have a huge olive tree in the back yard that has been dropping olives every year I have been here (10 years) and just going to waste. You see, I don't like olives.
But seeing as my wife does and I have a few friends that do, I thought I would give it a go.
It was almost too easy. I mean, pick olives, wash, put into a jar with some salt and repeat up to 10 times.
I had a jar of olives all done before breakfast.
I still have heaps of olives on the tree, but as an experiment, I am not going to go too far.
Also, as I said.... I don't like them.
If my wife tells me in around 7 weeks that they are good, then maybe next year I will do some more.
I will let you know :)

Hi Mark , with all those olives going to waste I'd be trying to develope a taste for them , maybe try different flavourings to add to the brine, we tried this a couple of years ago with great success , on the other side you will have a product that can keep your wife and friends happy , maybe try bartering, what area do you live in ? Trouble is I look at the olives and think... they are so small and you need so many to do anything, I have many more things to do with my time than pick thousands of olives.
But I get what you are saying.
And I am in Collie WA which is up in the hills south west. so we get fairly hot summers and cold winters.

Try bribing the kids , with maybe a special prize for the one who collects the most olives . I've come to believe that bribery is not such a bad thing, we go to work but only if someone pays us , is that not a type of bribery , it's got to be better than sitting back and waiting for the handouts to come , apply that idea to many scenarios in your life and see which sits comfortably , I say a fair days pay for a fair days work eh?
