    Dehydrating

Cooking first speeds up the dehydrating process as onions take forever. Are you rehydrating with boiling water? Hard to know, read the book, or google.I have only done my leeks and shallots.

Cheaper preserving jar alternative to Mason jars

I see now - they're a two piece lid similar to Mason jar tops. Easy to reuse. I'd love to find a universal lid which can fit to most standard jars regardless of the thread or mouth type.

Interesting to note that your fruit has red bracts whereas my fruit has green bracts. Or was that photo taken after the fruit had partially cooked?
